Pia cake came to Soc Trang with Teochew Chinese settlers. The pastry is rolled into many thin layers around mung bean, durian and salted egg.
Bakeries now make lava, taro and other versions, boxed as travel gifts.
The pastry must be paper-thin and melt in your mouth.
