Rice batter with coconut milk and sesame is spread thinly over a cloth-covered steamer. A bamboo roller carries each sheet onto the rack without tearing it.
My Long rice paper is thick, puffing up crisp and rich when grilled – great with banana, shrimp paste or wrapped around herbs.
Good sun makes clear, crisp rice paper.
